Turkish Purslane Stew

- serves 4
  • Ingredients
  • 1 bunch purslane
  • 1 onion
  • 2 carrots
  • 1 large, juicy tomato
  • 1 clove garlic
  • 3 T. olive oil
  • salt & pepper

  • Instructions
  • Rinse the purslane and remove thick stems. Chop coarsely.
  • Slice the onions and carrots. Chop the tomato coarsely.
  • Put olive oil in a pot , add the onions and salt and saute gently on low heat until translucent. Add the garlic and saute for 30 more seconds.
  • Add the carrots and tomato.
  • Simmer for 15 minutes with a lid on the pot.

Purslane Salad with Cherry Tomatoes and Onions

- serves 4
  • Ingredients
  • 1 large bunch purslane
  • 1 red onion
  • cherry tomatoes
  • juice of 1 lemon
  • 4 - 5 T. olive oil
  • Feta cheese (optional)
  • 1/2 t. salt

  • Instructions
  • Rinse the purslane and remove the leaves by stripping the stem.
  • Add the onion, tomatoes and Feta, if desired.
  • For the dressing, mix the lemon juice, olive oil and salt. Toss the salad with the dressing until all the leaves are coated.

Pork with Verdolaga (Purslane) and Tomatillo Sauce

- serves 4
  • Ingredients
  • 3 lbs pork ribs cut into 2 inch sections
  • 2 bunches purslane, cleaned
  • 6 tomatillos, husked and quartered
  • 2 serrano chili peppers
  • 1/4 cup cilantro
  • 1/2 cup white onion
  • 1/4 t. ground cumin
  • 2 cloves garlic
  • salt to taste

  • Instructions
  • Cover pork ribs with water in a large pot and boil over medium heat, covered for 20 minutes. Uncover and continue cooking, stirring constantly, over medium high heat until all liquid has evaporated and pork has browned, about 15 - 20 minutes. Remove from heat.
  • Combine onion, tomatillos, peppers, and cilantro in a medium saucepan. Cover with water and boil until tomatillos are tender, about 10 minutes. Drain and transfer vegetables to blender. Add garlic and puree until smooth.
  • Add the tomatillo sauce, cumin, salt and purslane to the browned pork ribs. Continue to simmer on low heat for about 20 more minutes.

Crunchy Purslane Snacks

- serves 2
  • Ingredients
  • 1 cup purslane
  • 1/2 cup breadcrumbs
  • 1/2 cup flour
  • 1 egg
  • 2 - 3 T. olive oil
  • pinch salt
  • pinch cayenne pepper (optional)
  • Instructions
  • Thoroughly combine egg and flour.
  • Dredge the purslane in the flour mixture, then coat it with breadcrumbs, salt and cayenne.
  • Sautee the purslane in olive oil for about 5 minutes or bake it in the oven for 15 minutes until golden brown.
